The Etna Brick Oven is built around a Pavesi oven core - a high performance refractory oven designed and manufactured in Modena, Italy by the Pavesi family since 1969.
The Pavesi oven core's unique feature is its monoblock floor. The single piece floor provides incredibly even heat across the baking surface, without hot and cold spots.
